Through New sub-menu in the File menu, you can create any type of document from any application.
Create a new spreadsheet from Writer; create a new database from Draw; etc. There are 11 items in the list. Simply highlight New reveal the list. Click the desired document type you want to create.

There also is a link to the Templates library for LibreOffice. The sub-menu also is in the File menu of the other LibreOffice applications.
If you create a database or presentation you may be taken through a setup wizard.
Creating a new document also can be done through the Standard toolbar or by pressing Ctrl + N (Cmd + N for Mac users on your keyboard. Keystrokes will only create the same kind of document. It will only create a text document if you use it in Writer, for example.
